APPLE-BREAD - A simple, fragrant apple nut raisin bread
I found this recipe on the back of a label for a baking loaf
pan. It is easy to make and because of the molasses it is
very fragrant while baking.
120 g butter
200 g sugar
3 eggs
200 g all-purpose flour
5 ml baking powder
2.5 ml salt
2.5 ml ground cinnamon
1 ml ground nutmeg
250 ml applesauce
60 ml dark molasses (treacle)
150 g raisins
75 g chopped nuts
(1) Preheat oven to 175 deg. C.
(2) In a large bowl, cream butter and sugar until
light and fluffy.
(3) Add eggs, one at a time, beating well after each
addition.
(4) Combine flour, baking powder, salt, cinnamon and
nutmeg; set aside. Combine applesauce and
molasses.
(5) Add dry ingredients alternately with applesauce
mixture to egg mixture. Fold in raisins and nuts.
(6) Pour into a greased 23x13x7 cm loaf pan. Bake at
175 deg. C for 1 hour, or until a toothpick
inserted into the center comes out clean. Cool 10
minutes, remove from pan and continue cooling on a
wire rack.
Difficulty: easy. Time: 15 minutes preparation, 1 hour bak-
ing, 30 minutes cooling. Precision: measure the
ingredients.
