BEAN-CASS-1 - An easy bean casserole
This recipe comes from A Primer on Bean Cookery by the Cali-
fornia Dry Bean Advisory Board. The recipe calls for red
beans, lima beans, and garbanzos, but any combination of
cooked or canned beans can be used. Pick your own favor-
ites.
400 g canned red beans, drained
400 g canned lima beans, drained
400 g canned garbanzo beans, drained
500 g ground beef
1 large onion, chopped fine
1 garlic clove, minced
50 g brown sugar
15-30 ml prepared mustard
12 cl ketchup
5 ml cumin powder (optional)
6 cl red wine
salt and pepper to taste
(1) Put drained beans into a 2.5-liter casserole; mix
lightly and set aside.
(2) In large skillet cook ground beef, onions, and
garlic until meat is lightly browned; stir in
remaining ingredients (except beans).
(3) Add skillet mixture to beans in casserole; mix
together.
(4) Cover and bake for about an hour at 160 deg. C or
simmer the mixture in a crockpot for 3 to 4 hours.
Difficulty: Easy. Time: 75 minutes if baked; 3 to 4 hours
in a crockpot. Precision: No need to measure.
