PEACH-BBQ - Pork ribs in peach tomato barbecue sauce
Moons ago my Mom made this for all us kids. Wouldn't eat it
(ribs & peaches? YUCHH!). Years (literally) passed. Well,
if you hadn't guessed, when I tried it, I decided to post it
to the net (as soon as I grew up).
1.5 kg pork spareribs, cut into serving-size pieces
10 ml salt
500 g peaches (use one can of canned cling peaches)
250 ml ketchup
30 ml worcestershire sauce
50 g onions (chopped fine)
30 ml flour (gravy flour works best)
30 ml prepared mustard
2.5 ml cloves (Ground finely)
2.5 ml pepper (fresh-ground black pepper is best)
(1) Pre-heat oven to 190 deg. C.
(2) In shallow roasting pan, arrange ribs, meaty side
up; sprinkle with 5 ml salt. Drain peaches, save
syrup.
(3) In saucepan, blend 250 ml of saved peach-packing
syrup with ketchup, worcestershire sauce, onion,
flour, cloves, 5 ml salt, and pepper. Heat to
boiling; pour over ribs. Bake about 11/2 hours, or
until fork tender, turning once.
(4) around ribs arrange peaches, bake about 5 minutes,
basting with the sauce.
Difficulty: easy. Time: 5 minutes preparation, 1 1/2 hours
cooking. Precision: approximate measurement OK.
