TOFU-BALLS - Vegetable and tofu
This recipe comes from the New Recipes from Moosewood Res-
taurant cookbook. They said that these vegetarian balls are
``one of our most popular standard lunch items''. I was
skeptical, so I gave it a try and indeed, they are quite
tasty.
50 ml vegetable oil
4 cloves garlic, crushed
1 large onion, finely chopped
1 large carrot, grated
1 green pepper, finely chopped
7 ml dried basil
5 ml ground fennel
5 ml dried oregano
2 large eggs
120 g bread crumbs
80 g walnuts, very finely chopped
10 g fresh parsley
30 ml Dijon mustard
25 ml sesame oil
15 ml tamari soy sauce
3 firm tofu cakes
black pepper
(1) Preheat oven to 175 deg. C.
(2) Saute the garlic, onion, carrot, pepper, basil,
fennel and oregano in the oil for 10 minutes or
until tender.
(3) In a large bowl, beat the eggs, then add all other
ingredients except the tofu.
(4) Mash the tofu and add it to the other ingredients.
Mix well.
(5) Form the mixture into 4-cm balls. Spread on a
greased baking sheet.
(6) Bake for 20-30 minutes at 175 deg. C or until gol-
den brown.
Difficulty: easy. Time: 30 minutes preparation, 30 minutes
baking. Precision: approximate measurement OK.
